  • 2<\/span> slices<\/span> bacon<\/span> chopped<\/span><\/li>
  • 5<\/span> cloves<\/span> garlic<\/span> peeled<\/span><\/li>
  • 2<\/span> dried red chiles<\/span> seeds removed<\/span><\/li>
  • 2<\/span> bay leaves<\/span><\/li>
  • 1<\/span> pound<\/span> dried black-eyed peas<\/span><\/li>
  • 4<\/span> cups<\/span> chicken stock<\/span><\/li>
  • 2<\/span> tomatoes<\/span> quartered<\/span><\/li>
  • 1<\/span> tablespoon<\/span> thyme leaves<\/span><\/li>
  • \u215b<\/span> teaspoon<\/span> kosher salt<\/span><\/li>
  • \u215b<\/span> teaspoon<\/span> pepper<\/span><\/li>
  • 2<\/span> tablespoons<\/span> lemon juice<\/span><\/li>
  • 4<\/span> green onions<\/span> sliced<\/span><\/li>
  • \u00bc<\/span> cup<\/span> cilantro leaves<\/span> chopped<\/span><\/li>
  • \u00bc<\/span> cup<\/span> Miceli's Parmesan Cheese<\/span> grated<\/span><\/li><\/ul><\/div><\/div>\n

    Instructions<\/h3>
    • Add the bacon to a pot over medium-high heat, let it cook for about 7 minutes, and then add the garlic, chiles, bay, peas, stock, and tomatoes. <\/span><\/div><\/li>
    • Bring the mixture to a boil, reduce the heat to medium-low, and then let it cook for about 1 hour.<\/span><\/div><\/li>
    • Add 1 cup of the mixture to a blender, pulse it, and then return it to the pot.<\/span><\/div><\/li>
    • Add the thyme, salt, and pepper, let it cook for about 15 minutes, and then add the juice, onions, cilantro, and parmesan.<\/span><\/div><\/li><\/ul><\/div><\/div>\n
