Ingredients<\/h3>
  • 1<\/span> teaspoon<\/span> shortening<\/span><\/li>
  • 1<\/span> boneless skinless chicken breast<\/span> halved<\/span><\/li>
  • 1<\/span> cup<\/span> grape tomatoes<\/span> halved<\/span><\/li>
  • 1<\/span> zucchini<\/span> chopped<\/span><\/li>
  • \u00bd<\/span> cup<\/span> corn<\/span><\/li>
  • 3<\/span> cups<\/span> penne<\/span><\/li>
  • \u00bc<\/span> cup<\/span> basil leaves<\/span> chopped<\/span><\/li>
  • 2<\/span> cloves<\/span> garlic<\/span> grated<\/span><\/li>
  • \u00bd<\/span> teaspoon<\/span> salt<\/span><\/li>
  • 2<\/span> cups<\/span> Miceli's Mozzarella Cheese<\/span> shredded and divided<\/span><\/li>
  • 3\u00bd<\/span> cups<\/span> chicken broth<\/span><\/li><\/ul><\/div><\/div>\n

    Instructions<\/h3>
    • Preheat your oven to 425\u2109, and grease an 11 x 7 inch baking dish with the shortening.<\/span><\/div><\/li>
    • Bring a pot of water to a boil, reduce the heat to medium, and then add the chicken. <\/span><\/div><\/li>
    • Let it cook for about 21 minutes, drain it, and then chop it.<\/span><\/div><\/li>
    • Add the tomatoes, zucchini, corn, penne, basil, garlic, salt, and 1\u00bd cups of the mozzarella, and then add the mixture to the dish.<\/span><\/div><\/li>
    • Add the broth, cover it with foil, and then let it bake for about 60 minutes.<\/span><\/div><\/li>
    • Add the remaining mozzarella, and then let it bake (uncovered) for about 3 minutes.<\/span><\/div><\/li><\/ul><\/div><\/div>\n
